If I understand it correctly, J3400 requires bidirectional data link with the car before connecting DC current. J1772 is a simpler pilot voltage/resistance value across the two signal pins, which the DC charger won’t recognize. So, nothing would happen if you plugged that adapter into a DC charger.

Fast chargers are much more common now and more are being installed all the time. I just did an 1800 mile road trip through Oklahoma, Texas, New Mexico. It was surprisingly easy to find charging, but I did have to plan ahead more than in a gas car.
I’ve been on US Mobile for several years. You can choose between the Verizon, T-Mobile or AT&T networks. I’m on the Verizon SIM. Yes, you are deprioritized. No, it’s not an issue.
I’ve been very impressed with US Mobile’s support, though I’ve only needed it a couple times.
